Our Highlands
After a considerable amount of research and trial and error, we were able to conclude that Highland cattle were the right breed for us and our ranch operation here in Huntsville, UT. They are efficient, hardy, and produce a fine, healthy and delicious cut of beef.
For a long time, these animals have been known for their beautiful appearance and docile nature. They are intelligent, a pleasure to be around and are incredible mothers rarely needing assistance while giving birth. They’ve lived on this planet in conjunction with humans for thousands of years and have provided many benefits to both humans and the environment. It’s well known that the native people of Scotland, where these cattle originated, used to bring their Highlands with them into small shelters to help keep themselves warm during the cold seasons. Cool right!? Their meat, hides, horns and milk are highly sought after, as well as their mild temperament.
When raised properly, grass fed Highland beef is lean, delicious, tender, low in cholesterol and high in nutritional value. These animals are slow growers, taking twice as long as most other cattle. With time, the minerals and other nutrients which they eat from our lush pastures have time to sink deep into their muscles. This provides a beautiful color and delicious flavor along with the high nutritional benefits of minerals and omegas. The majestic coats on Highlands benefit them and their beef by naturally keeping them warmer, making them need a thinner layer of subcutaneous fat, eventually affecting their beef to be lower in cholesterol.
We feel that slaughter day is important to mention. There aren’t many bad days on the ranch, but this is one of them. But it’s good too. A bittersweet but necessary part of the process. We don’t take it lightly. It takes a minimum of 3 years to get our beef to size. By the time this day comes, we’ve nurtured a trusting relationship with them, so we put a priority on making their end of life experience as fast and as fearless as possible. Our on-sight slaughter program ensures our beef cattle do not leave our property until their meat is in a refrigerated truck headed to the butcher shop to be dry aged and cut. In our opinion, it’s the right thing to do and it’s another important step in the quality of High Life Beef.
